Village non-yeasted bread. In the childhood we called it gray bread, we rubbed onion and garlic on it and made delicious toasts. It is gray because we mixed rye and wheat flour in order to make it. Rye flour is quite heavy and it is not that simple to “wake it up” without sourdough. In order to help the fermentation process we use sugar syrup. It speeds up fermentation process and makes the bread spongy. Here in Russia it is the most demanded bread and the most purchased one in Glavhleb.
Ingredients: wheat and rye flour, sugar syrup, salt, water, sourdough, rye surdough.
